2 large sweet potatoes, peeled and diced

1 red bell pepper, diced

1 green bell pepper, diced

1 small red onion, chopped

3 cloves garlic, minced

1 teaspoon smoked paprika

½ teaspoon cumin

½ teaspoon chili powder

Salt and black pepper to taste

2 tablespoons olive oil

4 large eggs (optional, for topping)

Fresh cilantro or parsley for garnish

Instructions
 

In a large skillet, heat the olive oil over medium heat.

    Add the diced sweet potatoes and season with salt, pepper, and smoked paprika. Cook for about 10 minutes, stirring occasionally, until the sweet potatoes begin to soften.

      Stir in the chopped red onion, and cook for an additional 5 minutes, until the onion becomes translucent.

        Add in the diced red and green bell peppers, garlic, cumin, and chili powder. Mix well and continue to cook, stirring frequently, for another 8-10 minutes until all vegetables are tender and slightly caramelized.

          For a delicious twist, create small wells in the hash and crack an egg into each well. Cover the skillet and let it cook for about 5 minutes, or until the eggs reach your desired doneness.

            Once cooked, remove from heat and garnish with freshly chopped cilantro or parsley. Serve hot.
