Ingredients

4 cups water

2 tablespoons loose black tea leaves (or 4 black tea bags)

1/2 cup fresh cherries, pitted and halved

1 tablespoon fresh ginger, grated

1/4 cup honey (or maple syrup for a vegan option)

1/2 teaspoon cinnamon

Juice of 1 lemon

Ice cubes

Fresh mint for garnish

Instructions

In a medium saucepan, bring 4 cups of water to a gentle boil.

Once boiling, remove from heat and add the loose black tea leaves (or tea bags), grated ginger, and cinnamon. Steep for about 5-7 minutes, depending on how strong you want the tea.

Strain the tea into a large pitcher, removing the tea leaves or bags, and allow it to cool for about 15 minutes.

While the tea cools, prepare the cherries. In a small bowl, mash the pitted cherries lightly with a fork to release their juices.

Once the tea is at room temperature, add the mashed cherries, honey (or maple syrup), and lemon juice to the pitcher. Stir well until the honey is fully dissolved.

Place the pitcher in the refrigerator and chill for at least 2 hours or until ready to serve.

To serve, fill glasses with ice cubes and pour the cherry ginger iced tea over the ice. Garnish with fresh mint leaves.

For an extra kick, add a few slices of fresh ginger or a sprinkle of cayenne pepper to individual glasses if desired.
