4 boneless, skinless chicken breasts

8 slices Swiss cheese

1 cup fresh spinach, chopped

1/2 cup sun-dried tomatoes, chopped

1 cup heavy cream

1 tablespoon Dijon mustard

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

2 tablespoons olive oil

1/2 cup breadcrumbs (optional for crunch)

Fresh basil for garnish

Instructions
 

Preheat your oven to 375°F (190°C).

    Pat the chicken breasts dry with paper towels and season both sides with salt, pepper, garlic powder, and onion powder.

      In a large skillet, heat olive oil over medium heat. Place the seasoned chicken breasts in the skillet and sear for about 5 minutes on each side, until golden brown. They do not need to be fully cooked through, as they will finish in the oven.

        While the chicken is cooking, in a separate bowl, whisk together the heavy cream, Dijon mustard, and a pinch of salt and pepper until well combined.

          Once the chicken is seared, arrange the chopped spinach and sun-dried tomatoes evenly over the chicken breasts.

            Layer two slices of Swiss cheese over each chicken breast, allowing the cheese to overlap slightly.

              Pour the cream mixture over the chicken, ensuring it evenly covers the breasts. If using breadcrumbs, sprinkle them on top for an added crunch.

                Transfer the skillet or place the chicken in a greased baking dish and bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the cheese is bubbling and golden.

                  Once done, remove from the oven and let the chicken rest for a few minutes. Garnish with fresh basil before serving.
