1 lb ground beef (or substitute with ground turkey, chicken, or plant-based meat)

1 tablespoon olive oil

1 small onion, finely chopped

3 cloves garlic, minced

1 tablespoon taco seasoning (homemade or store-bought)

1 can (14 oz) black beans, drained and rinsed

1 cup corn kernels (fresh, frozen, or canned)

1 cup diced tomatoes (fresh or canned)

1 cup shredded cheddar cheese (or dairy-free alternative)

12 small corn or flour tortillas

1 avocado, sliced

1 cup shredded lettuce

1/2 cup sour cream (or Greek yogurt)

1/4 cup fresh cilantro, chopped

Lime wedges for serving

Salt and pepper to taste

Instructions
 

Prepare the Beef: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for about 3 minutes until softened. Add the minced garlic and cook for an additional minute until fragrant.

    Cook the Meat: Add the ground beef to the skillet, breaking it apart with a spatula. Cook until browned and cooked through, about 5-7 minutes. Drain any excess fat.

      Season the Mixture: Stir in the taco seasoning, black beans, corn, and diced tomatoes. Season with salt and pepper to taste, and cook until heated through, about 3-4 minutes.

        Warm the Tortillas: In a separate pan or directly over a flame, warm the tortillas until they're pliable (about 30 seconds on each side). Keep them warm in a kitchen towel while you prepare the toppings.

          Assemble the Tacos: Take a warm tortilla, add a scoop of the beef mixture, and top with shredded lettuce, cheddar cheese, avocado slices, a dollop of sour cream, and a sprinkle of chopped cilantro.

            Serve: Garnish with a lime wedge and serve immediately. Allow guests to customize their tacos with additional toppings as desired.
