12 oz cheese tortellini (fresh or frozen)

1 lb ground beef (or turkey)

1 medium onion, chopped

2 cloves garlic, minced

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) diced tomatoes with green chilies

1 cup corn (canned or frozen)

2 tablespoons taco seasoning

1 cup beef broth (or vegetable broth)

1 cup shredded cheese (cheddar or Mexican blend)

2 tablespoons olive oil

Salt and pepper to taste

Fresh cilantro for garnish (optional)

Cook the Meat: In a large pot or deep skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for about 2-3 minutes until translucent.
