1 tablespoon baking powder

1/2 teaspoon baking soda

1 teaspoon salt

1/4 cup granulated sugar (optional)

1/2 cup unsalted butter, chilled and cubed

3/4 cup buttermilk, chilled

1 teaspoon vanilla extract

Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

    In a large mixing bowl, whisk together the flour, baking powder, baking soda, salt, and sugar (if using).

      Add the chilled, cubed butter to the dry ingredients. Use a pastry cutter or your fingers to blend the butter into the flour mixture until it resembles coarse crumbs, with some pea-sized pieces of butter remaining.

        In a separate bowl, mix the buttermilk, vanilla extract, and honey (if using). Pour this mixture into the flour-butter blend.

          Stir gently with a spatula or wooden spoon until just combined. Be careful not to overmix; some dry flour pockets may remain.

            Turn the dough out onto a lightly floured surface. Knead it gently for about 5-6 times, just until it comes together.

              Pat or roll the dough into a 1-inch thick rectangle. Use a biscuit cutter to cut out rounds. Gather any scraps, re-knead gently, and cut out additional biscuits.

                Place the biscuits on the prepared baking sheet, ensuring they are close but not touching.

                  Bake for 12-15 minutes or until the biscuits are golden brown on top.

                    Remove from the oven and let them cool slightly before serving. Brush with melted butter for extra richness, if desired.
