Ingredients

2 boneless, skinless chicken breasts

1 cup teriyaki sauce (store-bought or homemade)

2 cups Brussels sprouts, halved

2 tablespoons olive oil

Salt and pepper to taste

2 cups cooked jasmine rice

1 cup shredded carrots

1 avocado, sliced

2 green onions, chopped

Sesame seeds for garnish

Instructions

Marinate the Chicken: In a bowl, combine the chicken breasts with half of the teriyaki sauce. Cover and let marinate in the refrigerator for at least 30 minutes (or up to 2 hours for more flavor).

Prepare the Brussels Sprouts: Preheat the oven to 425°F (220°C). In a mixing bowl, toss the halved Brussels sprouts with olive oil, salt, and pepper until well-coated. Spread them out on a baking sheet in a single layer.

Roast the Brussels Sprouts: Place the Brussels sprouts in the preheated oven and roast for about 20-25 minutes, or until they are crispy and golden, tossing halfway through for even cooking.

Cook the Chicken: While the Brussels sprouts are roasting, heat a large skillet over medium-high heat. Remove the chicken from the marinade, letting excess sauce drip off. Cook the chicken in the skillet for about 6-7 minutes per side, or until cooked through and golden brown. Once done, remove from heat and slice.

Assemble the Bowls: To each bowl, add a generous scoop of jasmine rice. Top with sliced teriyaki chicken, crispy Brussels sprouts, shredded carrots, and avocado slices.

Add Garnishes: Drizzle the remaining teriyaki sauce over each bowl. Sprinkle with chopped green onions and sesame seeds for extra flavor and crunch.
