1 ½ lbs ground beef

1 cup bread crumbs

1 small onion, finely chopped

2 cloves garlic, minced

1 egg

¼ cup milk

1 cup shredded cheddar cheese

1 cup mashed potatoes (store-bought or homemade)

1 cup diced bell peppers (mix of red and green)

1 can (10.5 oz) cream of mushroom soup

1 tablespoon Worcestershire sauce

1 teaspoon Italian seasoning

Salt and pepper to taste

1 cup additional shredded cheese (for topping)

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat your oven to 375°F (190°C) and grease a medium-sized casserole dish.

    In a large mixing bowl, combine the ground beef, bread crumbs, chopped onion, minced garlic, egg, milk, Worcestershire sauce, Italian seasoning, and salt and pepper. Mix until well combined.

      Press the meat mixture evenly into the bottom of the prepared casserole dish to form a meatloaf base.

        Spread the cream of mushroom soup evenly over the meatloaf layer.

          Layer the diced bell peppers over the soup followed by the mashed potatoes, spreading it evenly across the top.

            Sprinkle the first cup of cheddar cheese over the mashed potatoes.

              Finally, add the additional shredded cheese on top (1 cup) for a golden, cheesy crust.

                Cover the casserole tightly with aluminum foil and bake in the preheated oven for 30 minutes.

                  After 30 minutes, remove the foil and bake for an additional 10-15 minutes, or until cheese is bubbly and golden.

                    Remove from the oven and let it cool for a few minutes. Garnish with fresh parsley before serving.
