Ingredients

2 boneless, skinless chicken breasts

1 tablespoon olive oil

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon cumin

Salt and pepper to taste

¼ cup chipotle ranch dressing (store-bought or homemade)

2 large flour tortillas

1 cup cooked brown rice

1 cup black beans, rinsed and drained

1 cup corn (fresh, frozen, or canned)

1 cup shredded cheddar cheese

1 avocado, sliced

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Instructions

Marinate the Chicken: In a mixing bowl, combine the olive oil, smoked paprika, garlic powder, onion powder, cumin, salt, and pepper. Add the chicken breasts, coat them well, and let marinate for at least 30 minutes (or refrigerate for up to 4 hours for more flavor).

Grill the Chicken: Preheat a grill or grill pan over medium-high heat. Remove the chicken from the marinade and grill for about 7-8 minutes on each side, or until fully cooked and juices run clear (internal temperature should reach 165°F). Remove from heat and let it rest for a few minutes.

Slice the Chicken: Once the chicken has rested, slice it into strips.

Assemble the Burrito: Lay out the flour tortillas on a flat surface. Start by adding half of the rice, followed by black beans, corn, grilled chicken strips, shredded cheese, and avocado slices on each tortilla.

Drizzle with Dressing: Pour some chipotle ranch dressing over the filling, then sprinkle with freshly chopped cilantro.

Roll the Burrito: Fold the sides of the tortilla over the filling, then roll it from the bottom up to enclose all the ingredients tightly. Repeat with the second tortilla.

Grill the Burrito: Optional but recommended - heat the grill again (or a pan) and place the burritos seam-side down. Grill for 2-3 minutes per side until golden brown and crispy.

Serve: Cut the burritos in half. Serve with additional chipotle ranch dressing on the side and lime wedges for squeezing on top.
