Ingredients
  

1 pound breakfast sausage (spicy or mild, based on preference)

8 large eggs

2 cups milk

6 slices of whole grain bread, cubed

1 cup shredded cheddar cheese

1 cup diced bell peppers (red and green)

1 small onion, diced

1 teaspoon garlic powder

1 teaspoon dried oregano

Salt and pepper to taste

Optional: fresh herbs for garnish (chives or parsley)

Instructions
 

Preheat your oven to 350°F (175°C). Grease a 9x13 inch baking dish with cooking spray or butter.

    In a large skillet over medium heat, cook the breakfast sausage until browned and crumbled. Drain excess fat and set aside.

      In the same skillet, add diced onions and bell peppers. Sauté until softened, about 5 minutes.

        In a large mixing bowl, whisk together the eggs, milk, garlic powder, oregano, salt, and pepper until well combined.

          Layer the cubed bread evenly at the bottom of the prepared baking dish. Spread the cooked sausage over the bread, followed by the sautéed vegetables.

            Pour the egg mixture over the layered ingredients, ensuring everything is well soaked.

              Top with shredded cheddar cheese.

                Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes.

                  After 25 minutes, remove the foil and bake for an additional 15-20 minutes until the casserole is set and the cheese is golden brown.

                    Allow the casserole to cool for a few minutes before slicing into squares.
