2 chicken breasts, boneless and skinless

Salt and pepper to taste

1 tablespoon olive oil

3 cloves garlic, minced

1 cup sun-dried tomatoes, chopped

1 cup heavy cream

1 cup chicken broth

1 teaspoon Italian seasoning

½ teaspoon red pepper flakes (optional for heat)

2 cups penne pasta

½ cup grated Parmesan cheese

Fresh basil leaves, for garnish

Instructions
 

Start by seasoning the chicken breasts with salt and pepper on both sides.

    In a large skillet over medium heat, add the olive oil. Once hot, add the chicken breasts and cook for about 6-7 minutes on each side or until cooked through and golden brown. Remove the chicken from the skillet and let it rest, then slice it into strips.

      In the same skillet, add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.

        Add the chopped sun-dried tomatoes, heavy cream, chicken broth, Italian seasoning, and red pepper flakes (if using) to the skillet. Stir and bring to a gentle simmer for about 5 minutes until the sauce thickens slightly.

          While the sauce is simmering, cook the penne pasta according to package instructions until al dente. Drain and set aside.

            Stir the grated Parmesan cheese into the sauce and mix until melted and combined. Taste the sauce and adjust seasoning if needed.

              Add the cooked penne pasta to the skillet and toss to ensure every piece is coated in the creamy sauce.

                Finally, add the sliced chicken on top and let everything heat through for another 2-3 minutes.

                  Serve hot, garnished with fresh basil leaves for a pop of color and freshness.
