1 lb (450g) beef chuck, cut into 1-inch cubes

2 tablespoons vegetable oil

1 large onion, finely chopped

3 cloves garlic, minced

2 medium carrots, sliced

1 red bell pepper, chopped

1 tablespoon sweet paprika

1 teaspoon caraway seeds

1 teaspoon dried thyme

1 can (14 oz, 400g) diced tomatoes

4 cups beef broth

2 medium potatoes, peeled and diced

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Heat the vegetable oil in a large heavy pot or Dutch oven over medium-high heat.

    Add the beef cubes to the pot, seasoning with salt and pepper. Brown the beef on all sides for about 5-7 minutes. Remove the beef from the pot and set aside.

      In the same pot, add the chopped onion and sauté until translucent, about 4 minutes. Add the minced garlic and cook for an additional minute.

        Stir in the sliced carrots and chopped red bell pepper, and cook for another 5 minutes, stirring occasionally.

          Add the paprika, caraway seeds, and dried thyme to the vegetables, stirring well to combine and release the spices' aromas for about 1 minute.

            Return the browned beef to the pot along with the diced tomatoes and beef broth. Bring the mixture to a simmer.

              Once simmering, add the diced potatoes and let everything cook together for about 40-45 minutes, covered, stirring occasionally until the beef and potatoes are tender.

                Taste and adjust seasoning with additional salt and pepper if needed.

                  Serve hot, garnished with fresh chopped parsley.
