Ingredients

6 egg yolks

3/4 cup granulated sugar

2/3 cup milk

1 cup heavy cream

1 cup mascarpone cheese

1 teaspoon vanilla extract

1 cup brewed coffee, cooled

2 tablespoons cocoa powder

12-15 ladyfinger cookies

Dark chocolate shavings (for garnish)

Instructions

In a medium saucepan over low heat, whisk together the egg yolks and sugar until pale and fluffy, about 2 minutes. Gradually stir in the milk and cook for another 5 minutes, stirring constantly until thickened. Remove from heat and let cool completely.

In a large bowl, whip the heavy cream until stiff peaks form. In another bowl, gently fold the mascarpone cheese and vanilla extract into the cooled egg mixture until well blended. Then fold the whipped cream into this mixture until smooth and fluffy.

In a shallow dish, pour the cooled brewed coffee. Briefly dip each ladyfinger into the coffee, making sure not to soak them.

In a 9x9-inch dish, layer half of the dipped ladyfingers on the bottom. Spread half of the mascarpone mixture over the cookies. Repeat with the remaining ladyfingers and top with the rest of the mascarpone mixture.

Cover and refrigerate for at least 4 hours or overnight for best results. Before serving, dust with cocoa powder and garnish with dark chocolate shavings.
