4 medium potatoes, peeled and thinly sliced

1 large onion, finely chopped

6 large eggs

1/4 cup olive oil

Salt, to taste

Freshly ground black pepper, to taste

1 tablespoon fresh parsley, chopped (for garnish)

In a large skillet, heat the olive oil over medium heat. Once the oil is hot, add the sliced potatoes and chopped onion. Season with salt and pepper. Cook, stirring occasionally, for about 15-20 minutes, or until the potatoes are tender but not browned. Drain the excess oil and set potatoes and onion aside in a bowl.

    In a mixing bowl, crack the eggs and whisk them until they are well beaten. Add a pinch of salt and pepper for seasoning.

      Gently fold the cooked potatoes and onions into the eggs, ensuring the potatoes are evenly coated.

        Wipe the skillet clean and return it to the heat, adding a tablespoon of olive oil. When the oil is hot, pour the egg and potato mixture into the skillet, spreading it evenly.

          Let it cook over medium-low heat for about 5-7 minutes or until the bottom is set and golden.

            To flip the tortilla, place a large plate over the skillet. Carefully invert the skillet, allowing the tortilla to slide onto the plate. Then, gently slide it back into the skillet, uncooked side down, and cook for an additional 5-7 minutes until fully set.

              Once cooked, transfer the tortilla to a serving plate and let it cool for a few minutes. Garnish with chopped parsley before slicing.

                Serve warm or at room temperature for a delicious brunch or appetizer!
