4 large eggs

2 medium potatoes, thinly sliced

1 medium onion, thinly sliced

1/4 cup olive oil

Salt, to taste

Freshly ground black pepper, to taste

Fresh parsley, for garnish (optional)

Instructions
 

In a medium-sized skillet, heat the olive oil over medium heat.

    Once hot, add the sliced potatoes and onions. Cook gently for about 15-20 minutes, stirring occasionally, until the potatoes are tender and slightly golden.

      Once the potatoes are cooked, drain them from the oil using a slotted spoon and place them in a large mixing bowl. Allow them to cool slightly.

        In a separate bowl, beat the eggs and season with salt and pepper.

          Add the cooled potato and onion mixture to the beaten eggs, folding gently to combine.

            Wipe the skillet clean, then return it to the heat and add a tablespoon of the reserved olive oil.

              Pour the egg and potato mixture back into the skillet. Cook over medium heat for about 5-7 minutes, or until the edges start to set.

                Using a large plate, carefully flip the tortilla to cook the other side. Slide it back into the skillet and cook for an additional 5-7 minutes, or until the tortilla is fully set in the middle.

                  Once cooked, transfer the tortilla to a serving plate. Let it rest for a few minutes before slicing.

                    Garnish with chopped fresh parsley, if desired.
