2 tablespoons olive oil

1 onion, diced

3 cloves garlic, minced

2 medium carrots, diced

2 celery stalks, diced

1 teaspoon dried thyme

1 teaspoon dried rosemary

1 teaspoon red pepper flakes (adjust for heat preference)

6 cups chicken broth

2 cups cooked shredded chicken

1 can (15 ounces) diced tomatoes, drained

1 cup fresh spinach, chopped

1 can (15 ounces) cannellini beans, rinsed and drained

Salt and pepper to taste

Fresh basil leaves for garnish

Instructions
 

Heat the olive oil in a large pot over medium heat. Add the diced onion and sauté for about 3-4 minutes until translucent.

    Stir in the minced garlic, diced carrots, and diced celery. Cook for an additional 5-6 minutes until the vegetables begin to soften.

      Sprinkle in the dried thyme, rosemary, and red pepper flakes. Stir to combine and cook for another minute to release the flavors.

        Pour in the chicken broth and bring to a simmer. Once simmering, add the shredded chicken and drained diced tomatoes, stirring well.

          Let the soup simmer for 15-20 minutes, allowing the flavors to meld together.

            Near the end of the cooking time, add the chopped spinach and cannellini beans. Cook for an additional 5 minutes until the spinach is wilted.

              Season with salt and pepper to taste.

                Serve hot, garnished with fresh basil leaves for a burst of flavor.
