Tuscan Garlic Chicken {Sheet Pan}

4 bone-in, skin-on chicken thighs

4 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried thyme

½ teaspoon red pepper flakes (adjust for heat preference)

2 tablespoons olive oil

Salt and black pepper to taste

1 cup cherry tomatoes, halved

1 cup baby spinach

½ cup sun-dried tomatoes, chopped (in oil, drained)

½ cup grated Parmesan cheese

Fresh basil leaves for garnish

Instructions
 

Preheat your oven to 400°F (200°C).

    In a large bowl, combine the minced garlic, dried oregano, dried thyme, red pepper flakes, olive oil, salt, and black pepper. Mix until well blended.

      Add the chicken thighs to the bowl, coat them thoroughly with the garlic mixture, and let them marinate for about 15 minutes for best flavor.

        While the chicken marinates, prepare the sheet pan by lining it with parchment paper for easy cleanup.

          Place the marinated chicken thighs skin-side up on the center of the sheet pan.

            Scatter the cherry tomatoes and sun-dried tomatoes around the chicken on the sheet pan.

              Roast in the preheated oven for 30 minutes.

                After 30 minutes, remove the sheet pan from the oven and scatter the baby spinach over the chicken and tomatoes.

                  Sprinkle the grated Parmesan cheese evenly over the chicken and vegetables.

                    Return the pan to the oven and roast for an additional 10-15 minutes, or until the chicken is golden brown, crispy, and reaches an internal temperature of 165°F (75°C).

                      Once done, garnished with fresh basil leaves before serving.
