4 medium-sized russet potatoes

1 cup shredded sharp cheddar cheese

1/2 cup sour cream

1/4 cup cream cheese, softened

4 tablespoons unsalted butter, melted

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

4 green onions, sliced (for garnish)

1/2 cup crispy bacon bits (optional for extra flavor)

Instructions
 

Preheat Oven: Preheat your oven to 425°F (220°C).

    Prepare the Potatoes: Rinse the russet potatoes under cold water and scrub off any dirt. Pat dry with a paper towel.

      Slice the Potatoes: Carefully place the potato on a cutting board and using two chopsticks or wooden spoons on either side, slice the potato thinly (about 1/8 inch apart) without cutting all the way through; the chopsticks will prevent you from cutting too deep. Repeat with all potatoes.

        Seasoning Mix: In a small bowl, mix the melted butter, garlic powder, onion powder, salt, and pepper.

          Coat the Potatoes: Brush each potato generously with the butter mixture, making sure to get it between the slices.

            Bake the Potatoes: Place the potatoes on a baking tray lined with parchment paper. Bake for 40-45 minutes, or until the edges are crispy and the potatoes are tender.

              Add Cheese and Other Toppings: Remove the potatoes from the oven and carefully spread the cream cheese in between the slices of each potato. Then, sprinkle the shredded cheddar cheese on top. If desired, sprinkle crispy bacon bits over the cheese.

                Final Bake: Return the potatoes to the oven and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
