Instructions
Preheat your oven to 425°F (220°C).
In a large mixing bowl, combine the olive oil, minced garlic, lemon zest, lemon juice, smoked paprika, cumin, salt, and pepper.
Add the cauliflower florets to the bowl and toss well to ensure they are evenly coated with the lemon-garlic mixture.
Spread the coated cauliflower florets in a single layer on a baking sheet lined with parchment paper.
Roast in the preheated oven for about 25-30 minutes, or until the cauliflower is tender and golden brown, stirring halfway through.
For an extra caramelized effect, broil for an additional 2-3 minutes at the end, watching closely to prevent burning.
Once roasted, remove from the oven and sprinkle with chopped fresh parsley and crushed red pepper flakes, if desired.
Notes
Serve on a large platter with extra lemon juice and parsley for garnish.
