Ingredients

1 lb ground beef (or turkey for a lighter option)

1 medium onion, diced

2 cloves garlic, minced

1 bell pepper (any color), diced

2 cans (15 oz each) kidney beans, drained and rinsed

1 can (15 oz) diced tomatoes with green chilies

2 tablespoons tomato paste

2 tablespoons chili powder

1 teaspoon cumin

1 teaspoon smoked paprika

1 teaspoon oregano

Salt and pepper to taste

2 cups beef broth (or vegetable broth for vegetarian version)

Optional toppings: shredded cheese, sour cream, chopped green onions, or jalapeños

Instructions

Sauté the Aromatics: In a large pot or Dutch oven, heat a tablespoon of olive oil over medium heat. Add the diced onion and bell pepper, sautéing until they soften (about 5 minutes). Stir in the minced garlic and cook for an additional minute.

Brown the Meat: Push the vegetables to the side and add the ground beef (or turkey) to the pot, breaking it apart with a spoon. Cook until browned, about 5-7 minutes. Drain any excess fat if using beef.

Combine the Ingredients: Stir in the chili powder, cumin, smoked paprika, oregano, salt, and pepper, coating the meat and vegetables evenly with the spices.

Add Tomatoes and Beans: Pour in the diced tomatoes with their juice, kidney beans, tomato paste, and beef broth. Mix thoroughly to combine all ingredients.

Simmer the Chili: Bring the mixture to a gentle boil, then reduce the heat to low. Cover the pot and let the chili simmer for 30-40 minutes, stirring occasionally. This allows the flavors to blend beautifully.

Taste and Adjust: After the simmering time, taste the chili and adjust any seasonings, adding more salt, pepper, or spices as desired.

Serve and Enjoy: Ladle the chili into bowls and top with your choice of shredded cheese, sour cream, green onions, or jalapeños for an extra kick.

                Prep Time: 20 min | Total Time: 1 hr | Servings: 6-8

                  - Presentation Tips: Serve the chili in deep bowls, garnished with a sprinkle of fresh herbs or a dollop of sour cream. Accompany with crusty bread or cornbread on the side for a comforting meal.
