8 oz lo mein noodles (or spaghetti as a substitute)

1 lb large shrimp, peeled and deveined

1 cup bell peppers, sliced (red, yellow, and green)

1 cup snap peas, trimmed

3 cloves garlic, minced

1-inch piece ginger, grated

3 green onions, chopped

3 tablespoons soy sauce

2 tablespoons oyster sauce (or mushroom sauce for a vegetarian option)

1 tablespoon sesame oil

1 tablespoon vegetable oil

Salt and pepper to taste

Sesame seeds and cilantro for garnish

Cook the Noodles: In a large pot of boiling water, cook the lo mein noodles according to package instructions. Drain and rinse under cold water to stop cooking. Set aside.

    Prepare the Shrimp: In a medium bowl, toss the shrimp with a sprinkle of salt and pepper.

      Stir-Fry the Vegetables: In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the minced garlic and grated ginger, sautéing until fragrant (about 1 minute).

        Add Shrimp and Veggies: Add the shrimp to the skillet and cook for 2-3 minutes until they turn pink. Then add in the bell peppers and snap peas, stirring for another 2-3 minutes until the veggies are vibrant and slightly tender.

          Combine with Noodles: Lower the heat to medium and add the cooked lo mein noodles into the skillet. Pour in the soy sauce, oyster sauce, and sesame oil. Toss everything together gently to ensure the noodles are well-coated in the sauces.

            Finish with Green Onions: Toss in the chopped green onions and mix for another minute to warm through. Adjust seasoning with additional salt and pepper if needed.
